Monday’s are made for good home cooked meals! Tonight I share my supper, Chicken and Vegetable Curry, adapted from Fitness Magazine. I added five boneless, skinless chicken thighs to get more protein in this dish. Paired with rosemary quinoa, this curry will definitely be tomorrow’s lunch. What’s cooking in your kitchen?
