Garlic Infused Mashed Potatoes

Garlic Infused Mashed Potatoes

1 lb. Yukon Gold Potatoes
1 tbsp. garlic (minced)
1 tbsp. olive oil
1/2 cup sour cream
2 tbsp. butter
1/8 tsp. salt
1/8 tsp. black pepper
1 tbsp. fresh chives

Peel and cut potatoes into even pieces; add to a pot full of boiling lightly salted water; reduce heat to a simmer until potatoes are cooked and softened about 25 minutes. Drain the potatoes and return to the pot; mash; add in sour cream, butter and garlic; season with salt and pepper. Mash the potatoes until all ingredients are combined and the texture is smooth. Top with chives and Serve.

*Johnna’s tip: Fresh garlic in mashed potatoes is one of the great delicacies in life. It adds just the right flavor to the mashed potatoes and 1 tbsp. does not allow the garlic to overpower the dish. Want to add even more flavor?? Try some wasabi or horseradish to season and spice things up. We are not spice fans at JKGF but wasabi mashed potatoes are amazing! Try and tell us how they turn out;-)
