Etiquette Tuesday: The Danny Meyer Effect

When Danny Meyer decided to eliminate tipping in his establishments, this changed the food industry game completely.  An industry that has instilled in diners that tipping is required versus optional, many are ironically joining in on the new trend.  We visit this for this week’s Etiquette Tuesday:  no tipping.  I am actually with it.  Before the industry staff professionals start barking down my throat, hear me out.  The reason Meyers and many others have adopted this new practice is because the waiters are typically the only ones that actually get to see the generosity of patrons in the restaurant.  How is this fair?

Now there are those waiters that make sure they break off everyone that helped them get through their shifts.  There are those other situations where the dishwasher is not even in their peripheral so they see none of the cash flow from the evening.  The dishwasher, cook and runner are just as important to the dining experience as the waiter that entertains you all night.  They deserve a tip just as much as the front man and if they are not going to get their share then go with the all or nothing rule.  It is a team effort at the end of the day and just like any team, you all win or you all lose together.  End of story.
