Uncle Paul’s Pop Up Chicken

I recently visited Water & Wall’s Pop Up, Uncle Paul’s Kitchen, which pays homage to Chef Tim Ma’s Uncle who paved the way for his culinary career (*see the full story here).  I will admit I was a bit taken aback when the dishes began arriving at the table where I had expected a more traditional contemporary American meal.  When Chinese cuisine came rolling out, I rolled with it.  Uncle Paul’s Kitchen boasts similarities to that of the original restaurant created by Chef Tim Ma’s Aunt and Uncle from the Shandong region of China.  Refreshing and not the heavy fair you would have expected from the fried chicken wings that graced our table, I appreciated the change from the typical liver mousse and pan roasted chicken.

Pop ups are all the craze now in the District and if you have not had your chance to try one, Uncle Paul’s is a good place to start.
