Brasserie Beck Fresh Oyster Selection

Since visiting France is not on my radar anytime soon (*or in my budget…le sigh), it was my pleasure to meet the folks behind Chablis Wines a couple of dinners ago.  Jean-Francois Bordet represented the Chablis family as the wine ambassador for the evening taking me on a mental trip through the northern part of Bourgogne, which is located in between Paris and Beaune.  The wine was paired with Chef Robert Wiedmaier’s special  small plate selections at Brasserie Beck.  The Chablis brand prides itself on white wines covering four appellations:  Petit Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru.  With the unique soil and climate where the Chablis vineyard lies, I was excited to taste from the vineyard that only permits the Chardonnay grape variety.

Limited was my initial thoughts when I heard the nature and territory of the Chablis wine and broad was what I thought after dinner was over.  There are so many variations and flavor combinations that could accompany the Chablis wine varieties.  Thoughts of seafood, cheeses, pastas, desserts and the list goes on and on of the possibilities.  Perhaps the major thing to take away from the Chablis soil is the clarity of the wine and crisp flavor.  The Chablis Premier Cru, not surprisingly, was my favorite of the bunch.  The most sophisticated and pure in its form, this wine shined favorably on its mate, Jumbo Lump Crab Gratin.

Wine selection can be a tricky thing but when you find one you like, stick with it.  I may not make it to Chablis vineyards anytime soon but it will make it into my wine collection.  A white wine that can stand up to ham, rabbit and crab, all in one??  Yes, please.
