Ribs can be tricky when trying to perfect your recipe.  The folks at Revive Catering decided to take a stab at it and based on their history in other things good, it is no surprise that they have a recipe that will make you raise your brow.  Revive has decided to name this new branch of the company DC City Smokehouse.  Accompanied with sides of fried Brussel sprouts and other cuts of juicy tender meat selections, these ribs are taking their stance as some of the best in NW DC.  Ribs are often associated with the summertime in my mind so trekking to the corner of Florida Avenue & North Capitol on a November night seemed a little out-of-place.  It seemed out-of-place until I bit into that first rib and decided ribs can definitely make their rounds all year.

Sweet and smoky meet on a juicy rib that doesn’t quite fall off the bone but allows you take that big bite that you envisioned from the time you saw it on the plate.  Not gorged in mounds of unnecessary sauce,  DC City Smokehouse has the key to good BBQ:  less is more.  Slow cooked and prepped in their smoker, these ribs should be added to your next lunch order or catering order.  The holidays often invite party planners to buy dainty finger foods that leave you unfulfilled and the reason your stomach could not absorb all those glasses filled with holiday cheer.  This holiday season I encourage you to forge a new way by tossing the dainty treats and bringing in the finger licking good ribs.  I promise they will fit into one of those cocktail napkins and you will have something to coat your stomach for all that “holiday cheer”.
