La Sandia, located in Tysons Corner Center, is currently hosting it’s 2nd annual Mole Festival.  This year, they are cooking up four featured moles including Mole Pipian, Rojo, Poblano and Negro. Guests are invited to taste Mexico’s national dish over a selection of proteins including chicken, steak, shrimp, pork and vegetables. Chef Richard Sandoval has chosen to celebrate these colorful sauces, as every October in San Pedro Actopan, Mexico, an annual Mole Festival that is held around town.   This festival is one of his fondest memories of food being shared between friends, family and neighbors.  La Sandia’s festival pays homage to one of Chef Sandoval’s fave pastimes.  Of course seasonal cocktails are on the menu to help guests wash down their moles; a spicy Habanero Blood Orange Margarita and a Guava Mojito.  La Sandia’s Mole Festival will run from October 1-December 31.
