You can find much talk (or “many words” if you want to get technical) about Spanish cuisine here on JKGF, whether it’s Johnna reflecting on her journeys in the beautiful country of Spain or whether she’s giving her thoughts on her experiences with various Spanish delectable treats right here in the States.  Executive Chef Bo Palker of Vinifera Wine Bar & Bistro, however, has introduced a spin on a Spanish favorite that presents a very new perspective.  Vinifera Wine Bar & Bistro, infamous for their World Tour Dinner series (in which they take your tastebuds on a journey around the globe without spending a dime on an airline ticket), now offers a Pintxo menu.

Pintxo, or pincho, (which actually means “to prick” in Spanish) is a traditional cuisine in the Basque region of Spain, that consists of small snacks that are commonly enjoyed at taverns. Not to be confused with a tapa (though the terms are sometimes used interchangeably for the same dishes), the snack usually consists of bread and a topping with which it is fastened with a toothpick or skewer. Vinifera has taken the Spanish mouthfuls of flavor and added a Mediterranean twist, and its new Pintxo menu consists of the following:

Boquerones (Anchovies), Tomato, Parsley and Garlic
Caramelized Onion, Tarentaise Cheese and Olive
Abruzze, Appellation and Quince Paste
Speck & Farmstead Cheddar
Harrisa Dusted Shrimp, Olive and Tomato
Crispy Baby Artichoke and Smokey Blue Cheese
Fresh Mozzarella and Oven Dried Tomato
Medjool Date and Lime Chirvel Mascarpone

Oh, and did I mention…? Each pintxo is only one buck! That’s right $1 – an affordable way to gather with friends and enjoy drinks with flavorful snacks or a great way to please your palate at the start of dinner. Vinifera, Chef Palker and his staff continue to treat the senses to international bliss, with impressive additions to menu and wine list, and a modern, welcoming atmosphere inside and out.  Treat your taste buds to a vacation at Vinifera and save those United Airlines points for another time.
